Salmon In Creamy Dill Sauce
Ingredients
- 4 (6-ounce) skinless, boneless Atlantic salmon fillets
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/4 cup chopped fresh dill
- 2 tablespoons chopped fresh chives
- 1 teaspoon lemon zest
Preparation
- Preheat oven to 400 degrees F (200 degrees C).
- Pat salmon fillets dry with paper towels and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 2 minutes per side, or until golden brown.
- Transfer salmon fillets to a baking dish and bake for 10-12 minutes, or until cooked through. While the salmon is baking, make the creamy dill sauce. In a saucepan, combine the white wine, heavy cream, dill, chives, and lemon zest. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
- To serve, spoon the creamy dill sauce over the salmon fillets.
Tips
- For a richer flavor, use smoked salmon fillets.
- If you don't have dry white wine, you can substitute chicken broth.
- Serve the salmon with roasted vegetables or mashed potatoes.
