Salmon In Creamy Dill Sauce

Ingredients

  • 4 (6-ounce) skinless, boneless Atlantic salmon fillets
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/4 cup chopped fresh dill
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon lemon zest

Preparation

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Pat salmon fillets dry with paper towels and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 2 minutes per side, or until golden brown.
  3. Transfer salmon fillets to a baking dish and bake for 10-12 minutes, or until cooked through. While the salmon is baking, make the creamy dill sauce. In a saucepan, combine the white wine, heavy cream, dill, chives, and lemon zest. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
  4. To serve, spoon the creamy dill sauce over the salmon fillets.

Tips

  • For a richer flavor, use smoked salmon fillets.
  • If you don't have dry white wine, you can substitute chicken broth.
  • Serve the salmon with roasted vegetables or mashed potatoes.
